All about Fermented Drinks!

Fermenting means allowing good bacteria to affect your body in a good way.
Nowadays the Fermented drinks topic is in a hot trend people are bored with the regular types of juices they need something new which is more healthier & tastier. The whole concept behind the fermented juices is they particularly those where your gut may improve, digestion, boost immunity & help to maintain a healthy weight.

Fermented drinks are not made now we get them from a long time for example curd a natural kind of food which has a good form of bacteria and naturally made no need the addition of extra ingredients.
Another example would be?

KOMBUCHA

Its kind of fermented and slightly alcoholic drink tastes somewhat like Champagne or apple cider.
It is made by fermenting tea by taking a symbiotic colony of bacteria (Scoby) and yeast added to tea and brewed


SCOBY

The origin can be traced back in 221 BC during the train dynasty the use to call that drink as “The tea of Mortality”
A Korean Physician named “Kombu” treated the Yoko (Emperor) with the tea and that emperor liked it so much that he kept that tea name.
So traditionally kombucha is made up of tea but nowadays you get many flavours of that.
During the process bacteria and yeast form a mushroom-like on the surface of the liquid. This is why kombucha is also called as a “Mushroom Tea”
The fermentation Process produces Acetic Acid (found in vinegar) and serval other acidic compounds, trace levels of alcohol and gases that make it carbonated.
Kombucha contains servel species of Lactic – acid bacteria which may have a probiotic function.

FERMENTATAION

Probiotic provides your gut with Healthy bacteria can improve many aspects of health.
Which includes digestion, inflammation( swelling, heat pain).
As kombucha is made up of green tea or normal tea it has the same plant compound which contains Polyphemus which is powerful Antioxidant in the body.


Kvass
It’s a fizzy bread fermented drink sometimes referred to as cola.
“Kvass” means leaven its origin cannot be exactly traced but it got into existence with the beer production the recipe was discovered by whom and when?
According to sources, a bag of grain got wet & grain started to grow. Then the farmer decided to make flour out of it.
But he couldn’t use it because it got spoiled so instead of wasting he tried to make beer but he ended up in making “kvass”
The production process is similar to beer making.

Edible Flowers Pt -1

Edible flowers Tea
Flowers as soon as we hear them we make a clear picture in our mind that they are meant for decorations or religious purpose. But very fewer people know that some flowers can help us in many ways to get rid of disease which highly effect on our body. Today we will not talk about every flower but I m going to share 2 such flowers who have many characteristics from which your most of the body related problems get cured.

1 . Marigold

Marigold, we always see this flower as a part of decorations, weddings, and religious purposes. But what we do after we use it we just throw it away. So this is wrong there are many benefits of having marigold but how we can consume it in what source?
So we can consume the marigold in the form of tea yeas marigold is used to infuse with hot water so whatever characteristics which are there in marigold get mixed with the water.
So what we get after we consumed this tea
It’s high in Anti-bacterial ( which suppress or destroy the ability to reproduce bacteria in our body).
Anti-inflammatory (an element which protects your body from irritation or injury, swelling.
It also can soothe the skin which is a natural cosmetic and is so mild enough that we can use it as baby care.
Not only this drinking marigold tea every day it promotes to healthy new tissues, increases blood flow to the affected areas, hydrates the skin speed-ups the process of skin repair as well as reducing stomach or menstrual cramps.
Apart from this, the marigold essence can use to treat fungal infections of all body. And sometimes it manages symptoms of cough, sore throats and fever

“Hibiscus”

Another flower which we are going to talk about is “Hibiscus”
Hibiscus is also a flower which has many good qualities which are beneficial for the human body
And yes this flower can also be consumed in the form of tea
Just you need to know is boil the water add the flowers along with some cinnamon and honey then strain it and for final touch add some dash of lemon that’s it!
It prevents us from Hypertension(the stage where blood arteries are higher than expected)
Reduces the blood sugar levels and keep your liver healthy and also do help in menstrual cramps. the best part helps in digestion detoxify the body and weight management of body too.
Its is rich in vitamin C
Now talking about these 2 flowers u can buy them in bulk naturally dry them with the help of sunlight or you can use them directly.
The reason some people dry them and use because, to be honest, they are sour and slightly bitter so drying helps the strong flavor to get in control, as well as u, can preserve them for a long time.

Story Of Chicken 65!

The story of the legendary “Chicken 65”
One of the famous appetizers or starters we get to eat of chicken in India is “Chicken 65” loads of people get this dish at all Chinese stalls all across India. But do you know the dish is Indian very fewer people know this fact but as there are so many recipes of chicken 65 every chef turns that recipe into their ways what we get nowadays is fried chicken tossed in semi gravy people add chili sauce, shezwan and etc?
But have you ever thought how authentically it is made so the chicken is seasoned and marinate with curd along with curry leaves and spices then fried and a Baghar (tempering) of dry chilies, mustard seeds, curry leaves.
But how this dish evolved so there are a bunch of stories which I would share with you
So first story is people say this chicken 65 is made up of 65 different Indian spices however any of the recipes don’t show that so this is false.

Also, it claims that the dish contains 65 different types of chili peppers are added in the dish
It is not over yet
Some say the meat was marinated for 65 days then it used to get cooked.
So all above these are stories so till this date there is no proper story behind it
But the fact is it was invented in Chennai by a gentleman called A.M Buhari in the year 1965. It was introduced at the hotel called “Buhari”.
This dish was invented at the time of war so Buhari wanted to serve the soldiers that could be made easy, delicious and quick so they fried the chicken and tossed it with some gunpowder masala so from that time this dish started.
so we have seen many recipes of chicken 65 and paneer 65 but have u ever seen Pahadi paneer 65 anywhere if not check out the recipe on my channel tomorrow!

Indian pickles!

Pickles the most important part of the Indian food u go anywhere in India u will never ever get a place where there will be no pickles. Pickle is not just food it’s a positive gesture of love which comes in pickles it has created a lot of employment to housewives who have an art of making these pickles.

Uppiankaayi- Kannada

Pachadi- Telugu

Urkai- Tamil

Loncha- Marathi

Athanu- Gujrati

These are some local names of pickle in India.

According to the New York Museum pickle history. Cucumber was the first vegetable that was pickled in BCE 2030 in Tigris Valley.

“Pickle” is a Dutch word meaning “Brine”

But what about the word “Achar” so basically this is a Persian word which means powdered & Salted Meats, fish or fruits, vegetables. Which are preserved in salt, vinegar or honey?

So the whole concept of pickle is the food which is cooked without heat.

However, today pickles are made by heating. In India, we get various types of pickle according to the availability of local ingredients.

As we know pickle is made with oil & vinegar and salt.

Earlier there were no refrigerators so to preserve the pickle oil used to be a source to keep them edible for the longest time

So following is the process of pickle

Process of raw ingredients

Washing & cleaning

Cutting of fruits& vegetable

Addition of oil, vinegar, spices and other ingredients if required

Pickles are cured

Packed in jars

Now the pickles which are popular in india/1

Chukh= red firey chutney pickle from Himachal Pradesh

Mango pickle

Kolhapuri Thecha= Pickled red chilli chutney

Baahgaaz or Bhootjolokia (bamboo shoot & king chilli ) pickle found in Assam

Now time for some facts

In Global Market Pickle value is of 10.3 billion US $

And India exports around 250.62 crore pickle every year and this number are increasing year by year.

Ladoos!

Imagine you are craving for food and suddenly someone comes and keep a box which has glossy, juicy round and tempting motichur ladoo or boondi ladoo. What else you need?

In India especially on the occasion of wedding, festivals like Ganpati navratras, holi etc we Indian share this sweetness among each other through sweets and mostly ladoo. Even in small occasion like results, new achievement, new car, a new home we do share ladoos mostly!

Ladoo Is the most ancient sweet which is very close to Indian cuisine and community. A sweet dish which has his own form of texture the desired shape but with different flavours but one unique taste which is sweet.

But from where this ladoos came to existence?

So ladoos are the accidental invention which is made by Ayurveda ved or Vaidya (word for doctor in Ayurveda)he was making a medicine and mistakenly he added more ghee so to cover up that he added more milk and powdered medicine made a roundels of that medicine which was not sweet and that round balls were so bitter so fro medicine purpose he add honey to make it sweet and then he tasted he felt so good then he started making them slowly people started like that medicine and as you know we Indians are never back to invent something new so from medicine to ladoos evolution started.

Another story says around 4BC the legendary surgeon Susruta got a cure for diseases but no one was ready to consume the bitter one so he took jaggery along with sesame and he mixed that medicine with jaggery and coated it with sesame and he treated all the patients with that!

How cool it sounds when your doctor innovated medicine for you!

So this are the two stories about ladoo

But no matter whatever the stories we are blessed with such a beautiful masterpiece

Chillies are not Indian?

Chillies are not Indian?
Yes, you heard it right chillies are not Indian they are originally migrated fruit which is originally not cultivated in India? Now you must be confused why I m saying like this chillies we get in India they are grown here then why?
Then why like this?
So here what happened and how?
‘Vasco da Gama’ a great explorer who use to explore new continents and places he was the one who use to travel a lot through the sea.
The best part of the sailors is whenever they stop they collect all the spices meats and lots of food items from the place where they stay before their voyage start they do like this because next destination is unknown and how much time it will take no one knows. Before India he was in Mexico we can call Mexico a city of chillies a hell lot of varieties are available over there so before he left he took all the spices as usual and chillies too.


Then he started his voyage to India first time he failed but second time on 24 December 1524 he finally reached India then he started going each and every place of India through seaside later he started exploring inside India deeper so as days passed he noticed there was no spice included in Indian food because at that time only spice which can give eat was peppers black and white so whatever chillies he brought from Mexico was about to get finished so he took seeds out of the chillies and he sows the seeds and watered it. As you know the growth, texture, flavour totally depends on the soil, water and temperature of the climate. After some days chillies were grown on the plant. This was the turning point we get chillies he was going everywhere he uses to plant chillies and other fruits and vegetables so like this everywhere in India chillies cultivation was started and till now people are following the same. Now we can find chillies in each part of India every chillies has a unique taste and colour.
Right now India is the highest producer of chillies with the contribution of 25% world production.
Andhra Pradesh almost produces 50 % of total country production.
Right now nearly 8,00,000 tonnes of dry chillies are produced in 6 months of span in India.

“Chaat” (Hors-d oeuvre) Appetizer!!

“Chaat the word literally means to lick, such a portion of food that goes like an explosion of flavours in your mouth! & it should be the same because Chaat (hours-d oeuvre) are starters to your meal that increase your appetite it increases your attention to have more food the same concept is with chaat you get a bunch of flavours from tangy, spicy, sweet and sour. So whenever you eat chaat in one bite you get all these flavours.
though it a very light meal but it totally depends on you that how to defend yourself from such amazing flavours!
And purposely it is kept light because it’s the first course.
But how this Chaat came into existence?

When it was invented?
most of us enjoy this “Chaat” but very some of them know how it was invented.
So the story is this was invented during the royal regime of “Shah Jahan”
in 1650!
Once Shahjahan was having his stomach upset and after so many medicines it was not getting cured because at that time there were no antibiotics so for even small to small disease it used to take time so during his stomach upset he was suggested to eat light meal but as you know kings never used to listen if they need something Shahjahan stomach was carving for some delicious food
so he ordered his khansamas to make something that will make him surprise and happy

khansamas where in big trouble what to do?
so he went to the kitchen he was having atta rawa curd fresh fruits and some spices so he made some atta crisps (hard puris) and as you know curd is light so he mixed spices with att crips along with kebab green chutney and he presented this to king Shahjahan

when he ate it he was so amazed and happy that he introduced this meal in his royal food!

After that, the fusion started to like the king used to travel all around India so the khansamas used to used local ingredients to make it more attractive and tasty so this is how chaat was introduced to this world.

Is Chicken Tikka Masala Scottish?

You people must be shocked after reading this statement but it is completely true.

welcome back to another interesting blog today we will look at chicken tikka masala. its been more than 70 years for this dish but still after so many interesting inventions in non-veg dishes people still order chicken tikka for lunch or dinner. this dish has satisfied so many people buy her finger liking flavours.

Chicken Tikka Masala is a slowly cooked tomato curry along with the spices and the addition is spiced roasted chicken and to make it richer in taste we add cream in it.

The unknown fact which we all don’t know is that there are around 48 recipes for this single dish all around the world. the prime ingredient remains the same which is the chicken.

The question lies who made the chicken tikka masala?

Britishers or Indian?

so there are 3 stories behind this so let’s see

1st  story

there was an Indian restaurant name Glasgow in Scotland a Pakistani chef named Ali Ahmed the priority of the restaurant says that it was  a busy night in a restaurant and late night a bus driver came and ask for a chicken curry the order was served but bus driver sent it back saying chicken is dry then in the kitchen tomato soup was left at that time  so chef added dry chicken in that soup added some spices and sent it back to the table the bus driver loved it and he became regular with his friends for that curry this is how dish came to life.

2nd story

This story says in Britain there were many Indian restaurants in which Bangladeshi chefs used to work there they made this and bought to life.

3rd story

this is a story from Punjab in 1970s people were not knowing about tandoor because it was rarely available people use to see tandoor in big events like weddings live tandoori chicken was displayed  but the small pieces of chicken used to left from tandoori chicken so there was a restaurant Moti mahal where this leftover pieces of chicken were tossed with tomato gravy & cream and the dish was bought to life which is named as chicken tikka masala.

people know these 3 stories but what exact one is there no one knows but foodies will never worry about that because at the end taste is important to us.

what else you need when you have a plate of hot & sizzling chicken tikka masala along with garlic butter naan or tandoori roti brushed with hot butter means life is complete what more expectations from left with l lolz! But jokes apart this dish has its own unique body and flavour which is unbeatable from last 70 years in Indian cuisine the dish is so renowned that every non-Indian are also the fan of this dish!!
