Indian pickles!

Pickles the most important part of the Indian food u go anywhere in India u will never ever get a place where there will be no pickles. Pickle is not just food it’s a positive gesture of love which comes in pickles it has created a lot of employment to housewives who have an art of making these pickles.

Uppiankaayi- Kannada

Pachadi- Telugu

Urkai- Tamil

Loncha- Marathi

Athanu- Gujrati

These are some local names of pickle in India.

According to the New York Museum pickle history. Cucumber was the first vegetable that was pickled in BCE 2030 in Tigris Valley.

“Pickle” is a Dutch word meaning “Brine”

But what about the word “Achar” so basically this is a Persian word which means powdered & Salted Meats, fish or fruits, vegetables. Which are preserved in salt, vinegar or honey?

So the whole concept of pickle is the food which is cooked without heat.

However, today pickles are made by heating. In India, we get various types of pickle according to the availability of local ingredients.

As we know pickle is made with oil & vinegar and salt.

Earlier there were no refrigerators so to preserve the pickle oil used to be a source to keep them edible for the longest time

So following is the process of pickle

Process of raw ingredients

Washing & cleaning

Cutting of fruits& vegetable

Addition of oil, vinegar, spices and other ingredients if required

Pickles are cured

Packed in jars

Now the pickles which are popular in india/1

Chukh= red firey chutney pickle from Himachal Pradesh

Mango pickle

Kolhapuri Thecha= Pickled red chilli chutney

Baahgaaz or Bhootjolokia (bamboo shoot & king chilli ) pickle found in Assam

In Global Market Pickle value is of 10.3 billion US $

And India exports around 250.62 crore pickle every year and this number are increasing year by year.

“Chaat” (Hors-d oeuvre) Appetizer!!

“Chaat the word literally means to lick, such a portion of food that goes like an explosion of flavours in your mouth! & it should be the same because Chaat (hours-d oeuvre) are starters to your meal that increase your appetite it increases your attention to have more food the same concept is with chaat you get a bunch of flavours from tangy, spicy, sweet and sour. So whenever you eat chaat in one bite you get all these flavours.
though it a very light meal but it totally depends on you that how to defend yourself from such amazing flavours!
And purposely it is kept light because it’s the first course.
But how this Chaat came into existence?

When it was invented?
most of us enjoy this “Chaat” but very some of them know how it was invented.
So the story is this was invented during the royal regime of “Shah Jahan”
in 1650!
Once Shahjahan was having his stomach upset and after so many medicines it was not getting cured because at that time there were no antibiotics so for even small to small disease it used to take time so during his stomach upset he was suggested to eat light meal but as you know kings never used to listen if they need something Shahjahan stomach was carving for some delicious food
so he ordered his khansamas to make something that will make him surprise and happy

khansamas where in big trouble what to do?
so he went to the kitchen he was having atta rawa curd fresh fruits and some spices so he made some atta crisps (hard puris) and as you know curd is light so he mixed spices with att crips along with kebab green chutney and he presented this to king Shahjahan

when he ate it he was so amazed and happy that he introduced this meal in his royal food!

After that, the fusion started to like the king used to travel all around India so the khansamas used to used local ingredients to make it more attractive and tasty so this is how chaat was introduced to this world.

Is Chicken Tikka Masala Scottish?

You people must be shocked after reading this statement but it is completely true.

welcome back to another interesting blog today we will look at chicken tikka masala. its been more than 70 years for this dish but still after so many interesting inventions in non-veg dishes people still order chicken tikka for lunch or dinner. this dish has satisfied so many people buy her finger liking flavours.

Chicken Tikka Masala is a slowly cooked tomato curry along with the spices and the addition is spiced roasted chicken and to make it richer in taste we add cream in it.

The unknown fact which we all don’t know is that there are around 48 recipes for this single dish all around the world. the prime ingredient remains the same which is the chicken.

The question lies who made the chicken tikka masala?

Britishers or Indian?

so there are 3 stories behind this so let’s see

1st  story

there was an Indian restaurant name Glasgow in Scotland a Pakistani chef named Ali Ahmed the priority of the restaurant says that it was  a busy night in a restaurant and late night a bus driver came and ask for a chicken curry the order was served but bus driver sent it back saying chicken is dry then in the kitchen tomato soup was left at that time  so chef added dry chicken in that soup added some spices and sent it back to the table the bus driver loved it and he became regular with his friends for that curry this is how dish came to life.

2nd story

This story says in Britain there were many Indian restaurants in which Bangladeshi chefs used to work there they made this and bought to life.

3rd story

this is a story from Punjab in 1970s people were not knowing about tandoor because it was rarely available people use to see tandoor in big events like weddings live tandoori chicken was displayed  but the small pieces of chicken used to left from tandoori chicken so there was a restaurant Moti mahal where this leftover pieces of chicken were tossed with tomato gravy & cream and the dish was bought to life which is named as chicken tikka masala.

people know these 3 stories but what exact one is there no one knows but foodies will never worry about that because at the end taste is important to us.

what else you need when you have a plate of hot & sizzling chicken tikka masala along with garlic butter naan or tandoori roti brushed with hot butter means life is complete what more expectations from left with l lolz! But jokes apart this dish has its own unique body and flavour which is unbeatable from last 70 years in Indian cuisine the dish is so renowned that every non-Indian are also the fan of this dish!!

The Vegan Food!

Hello, people welcome to another blog today we got a new topic which is vegan food so let’s start.

What is vegan?

  • We have seen people addressing themselves as a vegetarian who only eats vegetarian food, then comes egeetarina who love to eat eggs and finally no-vegetarian food who believes that meat is their life.
  • So now we will talk about vegan food people who eat vegan food are called as vegan people.
  • In simple words people who avoid dairy products followed by any meat, fish etc.
  • So we define these people like “an individual way of living that excludes all the possible practices that exploit credulity to animals for food, clothing and to promote the use of animal-free alternative for the benefits of a human, environment as well as animals”.
  • Vegan people are mostly those who love, respect and have affection towards animals.
  • They believe that humans and animals should be treated equally.
  • Whatever we eat in day to day life some of the other is related to an animal like milk from a cow? or if you are having a chicken sandwich? Or a  Pizza which is topped with cheese?
  • All the above food which I mentioned are connected to animals we get it from them either by slaughtering them or a by-product of them like milk, cheese, curd etc.
  • Some countries do strictly follow the veganism there are laws too so if u break the law u will be punished or you can be sentenced as per the law says.
  • Suggested reports say that the countries which have more vegans are as follows;
  • Taiwan– is often where we get vegans because dairy products are rarely used and eggs are optional.
  • Korea followed by Italy, Turkey and India.
  • As we say every coin has 2 sides one is negative and one is positive so let us start with
  • Positive side
  • Being a vegan is like contributing to the environment now u people will ask how?
  • Slaughtering of animals on a large scale due to increasing demand fishing is done on a large scale too.
  • As we know our food chain cycle is set it is followed one by one but if we remove any one component in between, the whole food chain gets disturbed.
  • So coming back to the positive side vegans try to protect all these above things which include protecting the food chain preserving and protecting the animals.
  • If no dairy products? No meat then what vegan eats?
  • Vegan food is about all plant-based diet which includes leafy vegetables, root vegetables, fruits, grain, pulses.
  • Many people have doubt what is vegan food?
  • Vegan food is something which is not related to animal products or meat rest all is vegan.
  • Negative side
  • As discuss above food chain cycle is most important because each one of us is dependent on one another for those who don’t know what is the food chain cycle it’s a process like.
  • In simple words corn is eaten by mouse then they are eaten by snake followed by owl.
  • So this was just an example.
  • If we keep on slaughtering the animals the cycle will be disturb.
  • If come to medical issues.
  • The absence of red meat which gives iron and dairy products which provide vitamin B12, B16.
  • Also fat-soluble vitamins like A, D, E.
  • Due to the absence of all these things & intake of all plant-based diet which this vitamin.
  • Our body works on the principal of digestion & metabolism for that.
  • We require a proper diet which should contain balanced amount vitamins, carbohydrates, protein for a smooth running of the human body.
  • If the human body lacks in any of the above components then chances of getting diagnosed with headaches, dizziness & anaemia.

It is good to start a vegan diet but it should be well  balanced .
